I have been hit by an uncooking bug :)

I have been s...l...o...w...l...y trying to get my kiddos on to more raw. They like many cooked foods AND raw foods, and I am very lucky as far as that is concerned. If they don't like what is cooked for dinner, they will ask if they can have veggies and 'dip' instead. They will polish off pints of berries, multiple pieces of fruit and love every minute of it. My daughter always tells me when she grows up she is going to be raw like me :) My oldest is the only one who will regularly drink green smoothies, though my youngest has been known to 'steal' my green smoothies ;) I am most concerned about my oldest. Being on the Spectrum, he eats what I call the 'autism diet' which consists of all things cheese and starch, with some eggs thrown on for good measure. I have hom about 50% on goat cheese, and I make our yogurt so I am not too concerned about that but...he moreso than the other 2 would HUGELY benefit from a more predominantly raw diet. He will eat very few veggies but LOVES green smoothies, so I told him he could have any flavor anytime he wants. I will make his favorites if he wants to drink them. Lucky for me, he is LOVING the ginger-based smoothies I have been making! :)

My latest smoothie is 1c strawberries, 1 frozen banana, 2c spinach, 2 pears and 4 kiwis with about a knuckle's worth of fresh ginger. So super yummy!

I am currently making Cheeze Kale Chips. I ran out of room in the D so tomorrow I will be making corn crisps, and raw pea snaps. There are these non-raw pea snacks that are probably not that healthy but I LOVE them and they are one of my guilty pleasures. Well, I got to thinking maybe I could make a raw version so I got some shelled peas that are soaking and tomorrow I am going to see if I can work some magic with them. Also on the agenda some cauli-parsnip rice for raw sushi as I SCORED at the reduced produce section todaand got LOTS of cukes and peppers which will amke some great raw California rolls :) I have some mini nori sheets so I can make bite sized sushi :)

I also scored on a HUGE stash of sweet potatoes which I did cook for the family tonite. Tomorrow will continue the uncooking adventure, as well as including some bread making for those who eat such stuff! I make a delicious brown bread and oatmeal bread from scratch. Mmmm...I got a couple super recipes from a stellar bread-making friend. Maybe I'll share some recipes tomorrow!
